Shaved Kohlrabi Salad with Lemon + Pistachios

Ingredients

  • 1 kohlrabi, peeled
  • 1 1/2 tbsp olive oil
  • Juice of half a lemon
  • 1 small clove of garlic, minced
  • 1 large handfuls of microgreens
  • 1/2 cup chopped pistachios
  • Salt and pepper, to taste

Instructions

  • Using a potato peeler, shave the kohlrabi into long, thin curls. Arrange these curls on a large platter. Season well with salt and pepper.
  • Whisk together olive oil, lemon juice and garlic. Pour dressing over the kohlrabi, and using your hands, gently toss, if necessary.
  • Sprinkle with micro greens and pistachios. Serve immediately.
